Spring is in the Air..and in my Kitchen

I woke up thie morning to a beautiful site. Look at all this fruit my momma bought!
Bananas, mango, pears, tomatoes (3 kinds!), avocado, watermelon, oranges, and pineapple!
(and there's more in the fridge :))

NOTE: It's just me, my mom, and my dad in the house. Yeah.
^^For my pre-run breakfast I made this brown rice toast with almond butter and some sweeeet strawberries.^^

I swear it's a different world out there before 7:30 am. I don't know what it is exactly- but the people walking their dogs are so smiley and happy, it's quiet and peaceful, the dew is still on the ground, and you see more animals than during the day. I guess that haven't gotten the hint yet by then that the day is starting and to go hide. I see the prettiest birds, a deer once in a while, and even (ewe!) a possum yesterday!!!
When I went to make my lunch I looked into the veggie drawer and found a whole bag of weirddd looking carrots. Check that out! It was huge!!! Looked more like a sweet potato than a carrot.
And my mom bought me some spin-art hummus and this weird looking vegetarian liver.
I read the ingredients- EGGPLANT! mmm my mom just may have found me a new staple!

That's a toasted Flat Out Wrap with a duo of dips on the side. I made a chopped salad this morning- similar to the one the other day- but this time these were the ingredients:

  • mixed greens

  • baby spinach 

  • that BIG carrot pictured above

  • hard boiled egg

  • red onion

  • red pepper

  • cucumber

  • cherry tomatoes

  • apple

  • grapes

  • craisins

  • slivered almonds

  • cilantro
I forgot my beloved chickpeas and I'm really unhappy about that. There is something about chopping a salad that just makes it THAT much better. And easier to eat.100% worth the time and effort if you ask me.
