The Simple Things In Life

When days are drowsy, and things are looking down, you gotta think of the good things in life. The things that make you happy.

Want to see what has made me happy in the last few days?

1. Everything-In-The-Fridge Salads
^^Lentils, guacamole, salsa, chips, cheese^^

2. Friends
3. Wine

4. My mom.
Happy Mother's Day to the best mom and best friend ever!!!

5. Beautiful flowers for my mom
^^Orange Star^^
6. Planting the Orange Star in this clay pot and getting my hands all dirty

7. Curried Cous Cous Salad (see below)

8. Picture tutorials...
^^1/2 cup whole wheat cous cous^^
+
^^1/2 cup boiling water^^
^^In the tupperware^^
^^cover it up^^
^^In the meanwhile, get out ingredients^^
^^After like 4 minutes, cous cous is done and ready to fluff with a fork^^
9. Basil. My favorite herb.
^^Roll it up^^
^^Cut into beautiful ribbons^^
10. Citrus in the summertime (this was squeezed over the cous cous)
^^This cous cous salad made in minutes!^^

11. Sporting events socializing with friends and using a Cubs game as an excuse to do it!
I think I actually spent less than 2 minutes total looking at the game.
But I do know that we lost. Oh well. Good times anyway!

12. Waking up to an almost empty jar of almond butter...
wait what?

It serves as the perfect vessel for my morning oats!
^^YUMMY^^

13. Ginger, Carrots, Oranges
14. Recreating the best juice EVER from Israel!
^^Such a vibrant orange color!^^

15. Spicy foods
^^Whole wheat "butt" of the bread loaf with a chipotle black bean burger (Morning Star), pepper jack cheese, and Adobo sauce. So spicy all together. Perfect.
16. Citrus in the summertime already been said.

16. Hearty, filling spring dinners.
^^Roasted asparagus, shrimp, cous cous, goat cheese, supremely spicy hummus^^

It really doesn't take much to make me happy. It's the simple things. Good friends, good food, lots of laughs, and keeping busy. Always having something to look forward to. And memories to look back on. It's what life's all about- not the big milestone events, but the day to day events.
