Smoothies, Snacks, and Spicy things

I made the BEST smoothie ever this morning!!

No really, I did. You NEED to try this!





Perfect Pink Smoothie:
Ingredients:
5 Frozen strawberries
5 Frozen banana chunks
5 Frozen mango chunks
1/3 cup oats
1 Tbs Almond butter
Almond milk (enough to let it blend)
Granola
Directions:
Blend!!!
Top with granola.

It was a full breakfast, all drinkable from a straw! And so perfect if you oversleep like I did this morning and had no time to sit down with breakfast.

I've been saving coffee cups for smoothies in the morn so I can just throw 'em out at work.

For lunch I made some sort of Mexican leftover concoction.

^^Black refried beans, WW cous cous, pico de gallo, arbol sauce, and queso cotija^^

Looks gross maybe but it was so good and spicy!

I walked to Whole Foods with Lisi to get her salad (I love going to that salad bar there- I get so many ideas!!!) and I bought this along with a HUGE pink grapefruit (unpictured) for snacks.

Have you tried Larabars yet? You need to! They are so pure in terms of ingredients. They are just fruit and nuts. No sugars added of any sort, and no other ingredients you can't pronounce. Well, this one had cocao powder and coffee in it. Mmm...I just wish they were a bit more affordable...

After work today I was itching to cook up a good healthy meal. It's been too long!

I started with this simple cherry tomato salad with basil.
^^Seasoned with salt, pepper, lemon squeeze^^

Then I made millet...much more successfully than last time.

Millet:
Ingredients:
1 cup Millet (from bulk section of Whole Foods)
2 1/2 cups Water
Directions:
Over medium heat, toast the millet on a dry skillet for about 3 minutes. Add the water, bring to a boil, then down to a simmer for about 30 minutes. Fluff with a fork.

I also made some caramelized onions:
^^1 full yellow onion, olive oil, salt, pepper^^

^^Sauteed spinach and garlic^^

I made the millet into a spicy grain salad, adding green onion, serrano pepper, 1Tbs salsa, cumin, and cinnamon. Salt and pepper.

And last but DEFINITELY not least... I made Vegan Black Bean Burgers

All together now...

I made 6 burgers, and my mom and dad started picking, I had one, and now there are only 3 1/2 left for work and lunches. Oh well. I need to test out how well these freeze. Even though they are so so easy to make. The spices in them are perfect.

Lately I've been strongly considering becoming vegan. I mean completely believe in it--- in terms of an ethical standpoint, an environmental/sustainability standpoint, and also from a health standpoint. But it's obviously really difficult. I eat a lot of dairy and I like eggs...a lot. Plus eggs are in a lot of things that we don't think about. However, the way I want to test this out is eat less animal products- maybe go a day here and there completely vegan. And maybe that'll become a week, and maybe, just maybe, one day I'll be as vegan as I want to be!
