Here's one way to get energized...

Hi there.

Today was such a dreary day, and especially on a Monday it was just so hard to stay awake at work!

I slept 'til 7:30 when I woke up on my own without an alarm. Wish I could have slept a bit later...

Woke up and had some oatmeal

^^Paired with a cup of back coffee^^

Super Creamy Oatmeal
1/4 cup oatmeal (I use quaker)
1/4 cup oat bran (Hodgson Mills)
1 cup almond milk
1 Tbs Chia seeds
Put all ingredients in pot and bring to boil. Stir while it bubbles for about 5 minutes. The longer the creamier.

Top with fresh fruit and nuts. Enjoy :)

For lunch today I used a mish-mosh of fridge leftovers:
^^Salmon, eggplant, spinach, olive/pomegranate tapenade^^

Microwave that...

^^Top Flat Out wrap with goat cheese and above ingredients ^^

Roll and pop into toaster oven...

^^Gets nice and crispy!^^

Around 2:30 I was totally feeling that "2:30 Feeling" (5 Hour Energy commercial anyone??)

Since I think I would not like a 5 Hour Energy drink, or any energy drink for that matter, I solved the problem like so:
^^2 advil (was a bit sore), a vitamin B (was told these perk you up), some dark chocolate, and some coffee^^

And a State Farm ad :)

It worked- 'til 6 when I came home for dinner---

^^Lentils, WW cous cous, hard boiled egg, parmesan cheese^^

Can you say protein!?

Such a random day of eats- now off to Pilates! Can't wait to stretch out...
